Non-alcoholic Amaretto sour with blueberries and rosemary
1 ½ oz (45 ml) non-alcoholic amaretto
½ oz (15 ml) blueberry syrup
¾ oz (23 ml) fresh lemon juice
1 egg white
Rosemary (for garnish)
Add all the ingredients in a shaker, ending with the egg white.
Mix vigorously to emulsify the egg white.
Add ice to the shaker and mix again until your fingers become very cold.
Strain through a fine sieve into a chilled cup.
Garnish with a sprig of rosemary.

This idea of Sour came naturally when trying to offer pairings with the aromatics of our alcohol-free amaretto. Here, the blueberry in particular blends with the maple syrup of the amaretto to create a real liquid pancake.
