Vegan Clover Club
2 oz (60 ml) gin (floral or herbal and vegetal)
¾ oz (23 ml) simple syrup or cane syrup
1 oz (30ml) lemon juice
4 cm vegan emulsifier
Raspberries (to garnish)
In a shaker, mash the raspberries in the syrup.
Add all the ingredients except the emulsifier and mix vigorously.
Open the shaker, add ice and mix again until your fingers become very cold.
Filter into the shaker and mix again without ice, adding the emulsifier.
Strain through a fine sieve into a chilled cup.
Decorate with fresh raspberries.
