Non-alcoholic Clover Club
1 ¼ oz (38 ml) non-alcoholic pink gin
½ oz (15 ml) raspberry syrup
¼ oz (8 ml) fresh lemon juice
1 egg white
Raspberries (to garnish)
Put all the ingredients in a shaker and mix vigorously.
Open the shaker
add ice and mix again until your fingers become very cold.
Filter into the shaker and mix again without ice, adding the emulsifier.
Strain through a fine sieve into a chilled cup.
Decorate with fresh raspberries.

Dating back to the late 1800s, even before Prohibition, this cocktail from Philadelphia was served in the men's club of the same name. Raspberry syrup was very popular at the time, and that's good because we make the tastiest ever!
