Classic Pineapple Daiquiri
2 oz (60 ml) white or spiced rum
¾ oz (22 ml) simple syrup or cane syrup
1 oz (30 ml) fresh lime juice
2 chunks of pineapple, mashed
Lemon wheel (for garnish)
In a shaker, mash the pineapples in the syrup.
Add remaining ingredients.
Fill with ice cream and stir until your fingers get very cold.
Strain through a fine sieve into a chilled cup.
Garnish with a slice of lemon.
