Classic Green Apple Gimlet
4 oz (120 ml) gin (spicy or herbal)
½ oz (15 ml) simple syrup or cane syrup
1 ½ oz (45 ml) fresh lime juice
6 slices of ginger
12 green apple cubes
Green apple cubes (to garnish)
In a shaker, mash the green apple and ginger in the syrup.
Add remaining ingredients.
Fill with ice cream and stir until your fingers get very cold.
Strain through a fine sieve into a chilled coupe or martini glass.
Garnish with green apple cubes.
