Classic Green Beast
¾ oz (23 ml) absinthe
¾ oz (23 ml) fresh lime juice
¾ oz (23 ml) simple or cane syrup
¾ oz (23 ml) cold water
Cucumber slice (to garnish)
Put all the ingredients in a shaker.
Fill with ice cream and stir until your fingers get very cold.
Strain through a fine sieve into a chilled cup.
Decorate with a cucumber slice.
About our Classic Green Beast
Disarmingly simple, the Green Beast was invented by French mixologist Charles Vexenat during the Cocktails & Spirits Bar Show in Paris. Traditionally served with Pernod and sliced cucumbers, it can be served both in a glass and as a punch in a bowl. Just multiply the quantities by the number of guests and mix with a spoon!
