1 cup (250 ml) white rice grains
3 3/8 cups (850 ml) water
1 cinnamon stick, broken in half
1 cup 3.25% milk or vegetable milk
¾ cup (190 ml) cane syrup
1 vanilla pod (optional)
In a large bowl, soak the rice in water overnight.
Strain the rice and keep the water.
Infuse the rice grains in the milk, cinnamon and vanilla for 3 hours.
Strain the rice milk mixture through a fine sieve.
Add the syrup and rice milk, stir with a bar spoon.
Refrigerate and serve very cold.
