Mimosa with Elderflower Syrup

Ingredients :

½ oz (15 ml) elderflower syrup

1 ½ oz (45 ml) fresh grapefruit juice

2 oz (60 ml) dry sparkling wine or Non-alcoholic dry sparkling wine

Grapefruit zest (for garnish)

Preparation :

In a chilled champagne glass, pour the syrup and the juice.

Gently add to the sparkling wine.

Garnish with a squeezed grapefruit zest.

Who says mimosa can't be made with grapefruit? And if so, why couldn't it also be floral and sweet? Like a good brunch, this cocktail should be enjoyed slowly.
