Watermelon Mojito (pitcher)
1 cup white rum
5 oz (150ml) lime syrup
2 sprigs of fresh mint
2 sprigs of fresh basil
2 cups (500 mL) cubed watermelon
1 ½ cups (375 ml) sparkling water
Fresh mint (for garnish)
In a food processor, combine watermelon and lime syrup until smooth. Pour into the bottom of an empty pitcher.
Clap the mint and basil leaves in the palm of your hand and add them to the bottom of the pitcher.
Add rum and fill with ice.
Stir with a chopstick or bar spoon until your fingers are cool.
Top up with sparkling water.
Garnish with a sprig of mint and basil.
Also pour into the glass of your choice.
