Classic Raspberry Mojito
1 ½ oz (45ml) white or amber rum
¾ oz (22 ml) simple syrup or cane syrup
¾ oz (22 ml) fresh lime juice
12 fresh mint leaves
6 crushed raspberries
2 oz (60ml) sparkling water
Fresh mint (for garnish)
In a tall glass, mash the raspberries.
Clap the mint leaves in the palm of your hand and add them to the bottom of the glass.
Add remaining ingredients, except sparkling water, and fill with ice.
Stir with a chopstick or bar spoon until your fingers are cool.
Top with sparkling water.
Garnish with a bunch of fresh mint.
