Raspberry Mojito #2
1 oz (30 ml) rum
1/2 oz (15 ml) lime syrup
6 mint leaves
4 raspberries, crushed
2 oz (60 ml) sparkling water
Mint and citrus (for garnish)
Tap the mint leaves in the palm of your hand and add them to a highball.
Crush the fruit if necessary and pour in the rest of the ingredients (except the sparkling water) and fill with ice.
Mix with a spoon or chopstick until your fingers become very cold.
Top with sparkling water.
Garnish with a slice of citrus fruit and a sprig of fresh mint.
