½ oz (15 ml) grapefruit syrup
2 oz (60 ml) sparkling water
Maple sugar, fleur de sel, fresh rosemary and lemon (for garnish)
Squeeze a lemon wedge around the outer rim of a wine glass.
In a plate, mix the fleur de sel and the maple sugar.
Dip the edges moistened with lemon juice in the mixture of maple sugar and fleur de sel.
Fill the glass with ice and add all the other ingredients.
Stir lightly with a bar spoon.
Garnish with a sprig of rosemary.
