1 oz (30 ml) reposado tequila
½ oz (15 ml) ginger syrup
2 oz (60 ml) sparkling water
Lemon slice and mint (for garnish)
Put all the ingredients in a copper mug or a glass filled with ice, except the sparkling water.
Fill with ice cream and stir until your fingers get very cold.
Top up with sparkling water.
Garnish with a slice of lemon and fresh mint.
