Ramos Gin Fizz with Lime and Lemon Syrups

Ingredients :

2 oz (60ml) gin

½ oz (15 ml) lime syrup

½ oz (15 ml) lemon syrup

½ oz (15 ml) 35% cream

3 drops of orange blossom

1 egg white

2 oz (60 ml) sparkling water

Lemon zest (for garnish)

Preparation :

Add all the ingredients in a shaker, ending with the egg white and mix vigorously to emulsify the egg white.

Fill with ice cream and stir until your fingers get very cold.

Strain through a fine strainer into a chilled tall glass.

Top with sparkling water

Garnish with grated lemon zest.

About our Ramos Gin Fizz with Lime and Lemon Syrups

One of the rare cocktails that owes its name to its inventor (and whose paternity is almost certain!), the Ramos Gin Fizz is a silky version of a traditional Fizz. It is said that when it was invented in the 1880s, Henry C. Ramos recommended shaking it for 12 minutes! Don't worry, the modern version doesn't require so much elbow grease!
