1½ oz (45 ml) Old Tom gin or woody, spicy or floral gin
¾ oz (23 ml) lemon syrup
3 oz (90 ml) sparkling water
Lemon wheel. (for garnish)
Add the ingredients to a tall glass except sparkling water and fill with ice.
Stir with a chopstick or bar spoon until your fingers get cold.
Top with sparkling water.
Garnish with a lemon wheel.

The mid 1800's. Old Tom, a kind of gin. A waiter nicknamed Collins at Limmer's Old House, London. Or, a hoax of the same name. In the end, one of the most beautiful and simple cocktails in history was born.
