Champagne Cocktail

INGREDIENTS LIST
- ¾ oz (22 ml) of cognac
- 1 sugar cube
- 3 dashes of Angostura bitters
- 5 oz (150 ml) of champagne or very cold sparkling wine
- Orange zest (for garnish)

In a previously cooled flute, saturate the sugar cube with Angostura bitters and add the cognac.
Carefully pour in the sparkling wine and let the sugar cube melt quietly while tasting.
Garnish with an orange zest.

About
A mythical cocktail that was served at the inauguration of the Eiffel Tower in 1889 : an Old Fashioned with champagne and cognac. Sugar and bitterness enhance the interaction between the grapes of cognac and champagne.
